Did you know about meat temperature myths

A common misconception in our industry is that all meats need to be cooked to the same internal temperature. However, different types of meat require different benchmarks to ensure both safety and quality. For instance, ground beef needs to reach 160°F, while poultry should hit a minimum of 165°F. It’s crucial for us to educate our team on these specifics to maintain operational safety and process efficiency.

I’ve found that using a food thermometer can really help clear up these myths. For example, I used to think pork just needed to hit 160°F, but it’s safe at 145°F with a rest time. It’s amazing how much a little knowledge can change our approach to cooking.
